Arroz Caldo

Arrows Caldo is the ultimate relaxing meal. This Filipino-style rice bowl is full of hearty, delicious and tasty chicken, ginger flavored broth and all slices. Perfect for lunch or snacks.


When I was growing up in the Philippines, I would occasionally claim sickness to remember school days. My mother would then send help to our house to buy and bring back all kinds of food I could think of, and one of my favorite requests was Arrows Caldo from the city's wet market.

And before going to work, she would give me detailed instructions on when to take paracetamol and when to warm up Arroz Caldo for me. My mother has always been so good, she is always keen on making her children happy. Did she know I was claiming the disease? Of course.



What is Arroz Caldo?

Arroz Caldo or aroskaldo i s a Filipino loga made from chicken and rice and flavored with fresh ginger, garlic, onion and fish sauce. Although its name is derived from the Spanish Arrows caldoso, which means "rice with broth", the grain of rice is more than the local adaptation of the key introduced by Chinese immigrants to the Philippines.

Thick, oatmeal porridge is usually served in individual bowls with various toppings and spices such as hard boiled egg, chopped scallions, toasted garlic and calamus. It is especially popular for breakfast, but it is also commonly used as a snack or light dinner.



Cooking tips

1)
While you can use boneless chicken breast or thigh meat, I recommend bone parts for maximum flavor. You will want to try the Chicken Fit version which is delicious and delicious to eat! You can also check out this lugaw and tokwa for the wagon version.

I use long grain rice because that's what I always have at home but if you prefer thick and thick consistency of heart then feel free to change to Malak Kit (sticky rice). To reduce the cooking time, you can use pre-cooked (steamed) rice and adjust the amount of liquid to about 3 to 4 cups.

To enhance the flavor and color, stir in a tablespoon or more of saffron. Better if you have access to more expensive saffron! Add about a pinch of threads because a little goes a long way.
4)
Ginger is an important ingredient in this Chicken Rice Corner and must be used fresh! For best results, please do not replace dry or crushed ginger.

Storage method

1)
To store leftovers, allow the cone to cool completely, transfer to airtight containers, and refrigerate for 3 days. Store spices and toppings separately and add when the kale is ready to serve.
2)
As it cools, it will thicken. To reheat, place in a large saucepan and add enough water for the desired consistency. Cook, stirring regularly until hot.
